Dr. Roach is a registered dietitian with a passion for health promotion, particularly in the area of obesity prevention. She is an experienced teacher and has taught in higher education for the past 22 years utilizing a variety of modalities. Dr. Roach has been working as an adjunct faculty member at Tulane since 2011. She received her B.S. in Dietetics from Nicholls State University and her M.S. in Institutional Management and Ph.D. in Nutrition and Food Systems from the University of Southern Mississippi. Dr. Roach has a variety of clinical nutrition experience and also enjoys working with health promotion programs in the areas of monitoring and evaluation. She believes that through such processes better outcomes can be achieved.
